Chicken Soup

 The best recipes are never measured perfectly, but here is all you need for the perfect, most delicious chicken soup.

Ingredients

  • Olive oil
  • Onion
  • Carrot
  • Celery
  • Smal piece of fresh ginger
  • Potatoes
  • Chicken with the bones
  • Potatoes
  • Salt and pepper
  • Turmeric
  • A bay leaf
  • Fresh parsley, dill and/or cilantro
Directions
    1.  In a large pot with a little bit of olive oil in the bottom, add the onion, carrots and celery. Cook a few minutes, then add the chicken and cook a couple more minutes.
    2. Add the amount of water you desire, depending on if you want a lot of broth or less, and add the salt and pepper, turmeric and bay leaf. Mix and simmer for one and a half hour.
    3. At this stage, add the potatoes, cover and simmer again for 30 to 40 minutes.
    4. Close the heat, take the chicken out, let it cool on a plate and when it cooled down enough to handle with your hands, separate the chicken from the bones. Add the chicken back in and at this point, add the fresh herbs also. Let sit for a few minutes to let all the flavors soak in and enjoy! 
    *Other great additions to this soup are dried white beans that can be soaked in boiling water beforehand. They can be added at the same time as the water in the soup so that they can cook enough time.

    *A big squeeze of fresh lemon juice added at the very end or directly in the bowl when served is delicious as well.

    * This soup is delicious served with couscous, rice or small pasta.
