Mini-Batch Bechamel Sauce

Ingredients (makes about 1 cup)

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup milk (whole milk preferred)
  • Pinch of salt
  • Pinch of white pepper (optional)
  • Pinch of nutmeg (optional)
  • 2–3 tbsp grated cheese of choice

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Add the flour and whisk constantly for 1 minute to make the roux.
  3. Slowly add the milk, whisking to keep it smooth.
  4. Simmer and stir until it thickens, 3–5 minutes.
  5. Remove from heat, add the cheese, and stir until melted and smooth.
  6. Season with salt, white pepper, and nutmeg to taste.
