Challah with Spelt Flour
Ingredients
- 2/3–3/4 cup warm water
- 2 1/4 tsp (7 g) instant yeast
- 3 eggs (2 for the dough, 1 for the egg wash)
- 1 tsp salt
- 1/4 cup olive oil
- 1/4 cup honey
- 2 cups white flour
- 2 cups spelt flour
- Sesame seeds for topping
Instructions
- Mix the warm water with honey, olive oil, salt and yeast. Let sit until foamy for 5 to 10 minutes.
- Whisk in 2 eggs. Add the flour and knead the dough for 5 to 10 minutes.
- Place the dough in a lightly oiled bowl, cover, and let it rise for about 1 to 2 hours until it doubles in size.
- Divide the dough into two loaves and braid them. You can also shape them into round hamburger slide breads. Place them on a baking tray lined with parchment paper. Cover with a plastic wrap and let rise a second time for 30 to 45 minutes. After 30 minutes of rising, preheat the oven to 350F (180C).
- Brush the tops with the beaten egg. Add sesame seeds at this point if desired. Bake for 25 to 30 minutes until golden.
