Challah with Spelt Flour


Ingredients
  • 2/3–3/4 cup  warm water
  • 2 1/4 tsp (7 g) instant yeast
  • 3 eggs (2 for the dough, 1 for the egg wash)
  • 1 tsp salt
  • 1/4 cup olive oil
  • 1/4 cup  honey
  • 2 cups white flour
  • 2 cups spelt flour
  • Sesame seeds for topping

Instructions

  1. Mix the warm water with honey, olive oil, salt and yeast. Let sit until foamy for 5 to 10 minutes.
  2. Whisk in 2 eggs. Add the flour and knead the dough for 5 to 10 minutes.
  3. Place the dough in a lightly oiled bowl, cover, and let it rise for about 1 to 2 hours until it doubles in size.
  4. Divide the dough into two loaves and braid them. You can also shape them into round hamburger slide breads. Place them on a baking tray lined with parchment paper. Cover with a plastic wrap and let rise a second time for 30 to 45 minutes. After 30 minutes of rising, preheat the oven to 350F (180C).
  5. Brush the tops with the beaten egg. Add sesame seeds at this point if desired. Bake for 25 to 30 minutes until golden.
