Coconut Banana Cookies



Ingredients

  • 1 ripe banana, mashed
  • 1 egg
  • 3 tbsp of butter
  • 2 tbsp of honey
  • 3/4 cup shredded coconut
  • 2/3 to 3/4 cup of flour
  • 1 tsp of baking powder
  • 1/2 tsp of cinnamon
  • A pinch of salt
  • Optional: Dark chocolate to add inside the cookies or to met for drizzle at the end

Instructions
  1. In a large bowl, melt the butter. Add the egg, honey and mashed banana.
  2. Mix in the shredded coconut first, then the flour, baking powder, cinnamon and pinch of salt.
  3. At this point, add pieces of dark chocolate inside, or you can leave this step out completely or decide to melt the chocolate to drizzle on top of the cookies once they are out of the oven.
  4. Place the dough in the fridge for 20 minutes. Preheat the oven to 350F (175C). Shape the cookies into balls, flatten them on the baking sheet and bake in the middle rack of the oven for 10-12 minutes.
  5. If drizzling melted chocolate as a topping decoration, let the cookies cool down completely. As you melt the chocolate in a bain-marie, add a tiny bit of coconut oil which will make the drizzling process easier and more beautiful. Place in the fridge for a few minutes fro the drizzle to set and enjoy!
